The 55th session of the Codex Committee on Food Hygiene (CCFH) wrapped up in Nashville, Tennessee, marking a significant step in international food safety standard-setting. Delegates finalized guidelines for the safe use and reuse of water in food production and processing, offering science-based tools to assess water quality across supply chains. These guidelines are particularly vital in sectors like fish and seafood processing, where water safety is crucial to prevent foodborne illness.
The committee also advanced updates on microbiological hazards, including Salmonella, Campylobacter in poultry, and Listeria in ready-to-eat foods. CCFH Chairperson Dr. Evelyne Mbandi praised the collaborative efforts of delegates and experts. The session reinforces Codex’s mission to protect public health while supporting harmonized standards for global food trade.
