Bamboo shoots are gaining recognition as a nutrient-dense food with possible benefits for blood sugar control, digestion, and inflammation. A first-of-its-kind academic review examining bamboo as a food source suggests it may support metabolic health, improve gut function, and provide antioxidant effects.
The review, conducted by researchers at Anglia Ruskin University in England, analyzed existing human and laboratory studies on bamboo consumption. Findings indicate bamboo shoots are high in protein, contain moderate fiber, and are low in fat. They also supply essential amino acids, minerals such as selenium and potassium, and several vitamins, including B vitamins and vitamin E.
Human studies reported improved blood sugar regulation and healthier lipid profiles, while laboratory research showed anti-inflammatory, antioxidant, and probiotic effects. Bamboo compounds were also found to reduce harmful chemicals formed during cooking.
However, researchers warn that bamboo must be properly prepared. Some varieties contain cyanide-releasing compounds and substances that may affect thyroid function if eaten raw. Pre-boiling eliminates these risks. Researchers say more human studies are needed to confirm bamboo’s potential as a global “superfood.”
