Why Bread May Contribute to Weight Gain, According to New Research

Bread has long been a staple food across cultures, but rising obesity levels are prompting scientists to re-examine its role in modern diets. While fat has traditionally been blamed for weight gain, carbohydrates like bread, rice, and noodles are now drawing closer attention for their metabolic effects.

A study at Osaka Metropolitan University explored how carbohydrate-rich foods influence weight and metabolism. Researchers observed that mice showed a strong preference for carbs such as bread and flour, often abandoning their regular diet. Interestingly, even without a significant rise in calorie intake, the mice experienced increases in body weight and fat mass.

The study found that weight gain was linked more to reduced energy expenditure than overeating. Additional findings included higher fatty acid levels in the blood and increased fat accumulation in the liver. When carbohydrate-heavy foods were removed, both weight and metabolic health improved.

Published in Molecular Nutrition & Food Research, the research suggests that dietary balance—not just calorie count—plays a crucial role in managing weight.
